Fried Zucchini

Need something new to make with your zucchini? You can't go wrong with this dish. Tried and true for years by my sister-in law and her family.

Ingredients:
Zucchini
Flour
Eggs
Corn Flake Crumbs
Kosher salt
Oil

Directions:
Cut the zucchini into slices, dip in the flour, then the eggs, then the corn flake crumbs. Fry in oil until brown and crispy on both sides. Drain on plate covered with paper towels and sprinkle with kosher salt.

Moist and Savory Chicken.

My mom used to make this a lot.

Marinate 4-6 chicken breasts in the following marinade for 12 - 24 hours before grilling:

2 parts lemon-lime soda (Sprite, 7-up, Sierra Mist, Lemon-lime Shasta :), etc...)
1 part oil
1 part soy sauce

The carbonation in the soda does something to allow the chicken to absorb the oil and soy sauce to make it moist and savory.

Give it a try. I love it.
